Mini Fruit Crumbles

These mini fruit crumbles are a delightful treat, featuring a mix of seasonal fruits topped with a crunchy, golden crumble. Served in individual portions, they’re perfect for satisfying your sweet tooth without overindulging.
Ingredients
4 Apples, peeled and chopped, such as Gala or Golden delicious.
150g Blackberries
1 tsp Vanilla extract
½ tsp Ground cinnamon
100ml Water
1 Egg white
80g Oats
1 tbsp Maple syrup
2 tsp Demerara sugar
Directions
- Preheat the oven to 200*c / Gas 6.
- Put all the filling ingredients in a small saucepan, bring to the boil, simmer for 20 mins.
- Whisk the egg white until soft and fluffy, stir in the oats, maple syrup and cinnamon.
- Line a baking tray with greaseproof paper, spread out the oat mixture. Use the back of a spoon to flatten it out as thin as possible, put Oats on top shelf of the oven for 10 mins.
- Remove from the oven, allow to cool for a couple of minutes. When cooled crumble up in your hands to break up as much as possible.
- When the filling has simmered for 20 mins, divide between 4 ramekins, sprinkle crumble over the top.
- Sprinkle ½ tsp demerara sugar over the top of each crumble, pop on a baking tray and bake for 20 mins.
